Start planning your menu by using our Corned Beef Hash and Fried Potato recipe! It’s the perfect way to use leftover corned beef or try a new recipe!

Corned Beef Hash and Fried Potatoes
1lb Corned Beef, cooked and chopped
1 Medium Onion, chopped
2 Lb’s Potatoes, skins removed, sliced thin
4 Bacon Slices, optional
Olive Oil
Salt and Pepper to Taste
Fresh Parsley for Garnish, optional.

Start by heating 4 tablespoon of olive oil in a deep pan and cook potatoes until they start to brown on both sides. Next add in the chopped onion and sauté until they become translucent. Add in the chopped corned beef and continue cooking until it gets crispy. Keep stirring until most of the beef is crispy. About 10 minutes. Taste and add any salt and/or pepper. Corned beef can be very salty so the amount you need to add, if any, will vary. To serve the corned beef hash and fried potatoes simply put the meal on a large platter and garnish with fresh chopped parsley. Serve this family style.

Pair this with some warm Irish Soda Bread and an Irish Cheddar Quiche and you’ve got a great brunch to please everyone. Plus you’ll be free to mingle with your friends instead of stuck in the kitchen!

Holiday Appetizer Recipe – Spicy Cran-Rosemary Sauce

Looking for a quick and delicious appetizer for this Holiday Season? Try our Homemade Spicy Cran-Rosemary Sauce that you can layer over a creamy soft cheese and serve with crackers or toasted crostini.

For our recipe we didn’t want to stick to a traditional cranberry sauce so we kicked up the flavor a few notches. By combining rosemary and jalapeno your guests will get a great taste of the season that will leave them craving more!

Spicy Cran-Rosemary Sauce
1 bag of cranberries
1 cup water
½ cup sugar (may be more if the sauce is too tart)
2 large sprigs of fresh rosemary finely chopped
Juice of 1 orange
Zest of 1 orange
1-2 jalapenos, minced
Cayenne pepper to taste

Sort through your cranberries and remove any stems or berries that have turned. Combine water, cranberries, orange juice and zest, rosemary, jalapeno and sugar in a large sauce pan over medium heat. Allow to cook until all of the cranberries begin to burst, about 10 minutes. Mixture will naturally thicken so make sure you keep an eye on the mixture so it doesn’t burn. If you feel the mixture is cooking too quickly, lower the heat. After all the berries have cooked down and thickened, remove from the heat. Taste the sauce to see how spicy it is. This will vary depending on how hot the jalapeno are. If you feel you need to add more heat, start by adding 1/8-1/4 teaspoon of cayenne paper. Serving the sauce with the cheese will help mellow the heat so you may want to make the sauce spicier than you normally would. Once you’ve reached your desired heat, let the sauce cool before storing in a heat proof dish.

To serve the appetizer, soften your cheese out of the refrigerator for about an hour. Warm the cranberry sauce in the microwave or onto the stove until it’s warmed though. Pour the cranberry sauce over the cheese and serve with crackers or toasted crostini. We garnished our appetizer with fresh orange zest and fresh rosemary.

Personalized Homemade BBQ Sauces.

I love cooking and wanted to create unique Valentine’s day gifts for the special people in my life. I wanted to focus on more of a savory treat and knew that BBQ sauce was a great base! I mean, who doesn’t love BBQ! For my recipes I decided to make my own BBQ sauce base and kick it up a notch with a few more simple ingredients. You can make your own base, which was very easy, or jazz up a favorite BBQ sauce you already have. The three flavors I decided on were, Honey, Spicy Chipotle and Chocolate, it is a Valentines Day gift after all. Once I prepared each sauce I stored them in glass jars that I had around the house. It gave each sauce the perfect homemade feel!

Molly’s BBQ Sauce Recipe

½ cup Ketchup

¼ cup Cider Vinegar

3 Tablespoons Brown Sugar

2 Teaspoons Chili Powder

1 Teaspoon Garlic Powder

3 Shakes Worcestershire Sauce

1 Teaspoon Salt

Honey BBQ Sauce

Add ¼ cup of honey into the sauce

Chipotle BBQ Sauce

1 Tablespoon Chipotle Powder

1 Tablespoon Sriracha Hot Sauce.

½ Teaspoon Cinnamon

Chocolate BBQ Sauce

3 oz Semi-sweet chocolate
