Looking for a fresh, healthy, dinner idea? You can’t go wrong with Mahi fish tacos.
Concierge Cristin, combined two recipes to create the perfect combination for a wonderful summer meal!
- Mahi- Mahi or any flakey, white fish
- Corn tortillas
- Sour cream
- Cole slaw cabbage
- Hot sauce
- Small red onion
- 1 jalapeno
- Chili powder
- Canola oil
Place fish in a medium size dish.
Whisk together the oil, lime juice, ancho chili powder (I used regular chili powder), jalapeno, and cilantro and pour over the fish.
Let marinate for 15 to 20 minutes.
Next, grill corn tortillas for about 30 seconds on each side.
While fish is cooking, chop half of a red onion, slice jalapeno, and avocado.
Place a few chunks of fish on tortilla, top with cole slaw cabbage, red onion, cilantro, jalapeno, sliced avocado, salt/pepper, a dollop of sour cream and hot sauce.
Try serving with corn on the cob or Spanish rice.
