DIY: Hot Cocoa Cookies with Marshmallows

If you are looking for the perfect winter cookie, look no further! These hot cocoa cookies from Stepable are sure to warm you up on those cold days!

Ingredients

½ Cup Butter
1 ¼ Cups Light Brown Sugar
2 Teaspoons Vanilla Extract
1 ½ Cups All-Purpose Flour
¼ Teaspoon Salt
12 Ounce Bag Semisweet Chocolate Chips
3 Large Eggs
¼ Cup Unsweetened Cocoa Powder
1 ½ Teaspoons Baking Powder
8 Ounces Semisweet Baking Chocolate, broken in 1 inch square pieces
16 Large Marshmallows, Cut in Half
Parchment Paper

Directions:

Preheat oven to 325 degrees

Step 1: Melt the butter and 12 ounces of semisweet chocolate chips. Constantly stir the chocolate until melted. Remove the chocolate from the heat and let it cool for 5 minutes.

Step 2: Combine the brown sugar, eggs and vanilla and mix until blended. Add in the cooled chocolate mixture until combined.

Step 3: Add the cocoa powder, flour, baking powder and salt to the mixture from step 2. Cover the bowl with saran wrap and refrigerate for 2 hours.

Step 4: Line your cookie sheets with parchment paper. Scoop and drop the cookie dough into a small ball on the cookie sheet. Bake for 12 minutes.

Step 5: Take the cookies out and place a piece of chocolate on the center of each.Place a half marshmallow piece on top of each chocolate piece.

Step 6: Put cookies back into the oven for 4 minutes to melt the marshmallow and chocolate.

Step 7: Let cool and enjoy!
